Tempeh is a traditional Indonesian food made from fermenting soybeans, they naturally bind in a "cake" form due to the fermentation process. It is enjoyed as its own thing in southeast asia. It's not just a "meat substitute"😒

You can get rid of the bitter taste of tempeh by boiling it for 10 minutes or so before you season it.
Don't wash mushrooms. They won't absorb the sauce as good, because they already are soaked in water. Just brush dirt off.

Just a tip for people who wants to switch to plant based diet: Stop trying to find meat substitutes!! Youll just end up eating meat again trust me. Protein substitute? ALL plants contain protein since they are the original source of protein. Plants have the ability to process nitrogen to extract tge amino acid content which are the building blocks of protein, animals cannot do that. The protein you're getting from meat are recycled from the plants that they eat. Look it up.

Your whatever they are called the drawings make me think of flies flying around the food. I'm not meaning to be rude just maybe something you may want to think abt.
It always surprises me when people talk of veggies /tofu/cottage cheese as a ‘meat substitute’! In India we are quite comfortable with eating totally vegetarian dishes as a complete and filling meal in itself. Accompanied by rice/flat breads and some lentils. Always a simple salad to go with it. Fish/Meat/Chicken are relished in a entirely different way which doesn’t make a purely vegetarian meal any less enjoyable.
And yeah, I have been reading about some Indian vegetarian dishes being cooked to death and all nutritional value being lost! I don’t know what Indian food they’re used to but I have always made mine light and healthy. Use of coconut oil, turmeric, curry leaves etc on a regular basis has meant that healthy eating is an everyday affair for my family.
We do indulge and have heavy curries, maybe once a week. But an everyday meal is a healthy mix of carbs, proteins and lots of veggies.
PS: Erica’s calm, neat and efficient cooking is such a joy to behold.
If you boil the tempeh before it is less bitter. ❤️
