I enjoy your videos, but I skipped this one because I thought, "a meat-eater is going to tell me – a 40-year-vegetarian – how to be a vegetarian?" It's seems a little…mmm….let's go with "odd." I was glad you mentioned the UK (where I am from and live) because I couldn't imagine what "shitty Indian food" would be like because I'm so used to the amazing food from the Indian and South Asian communities here. As a vegetarian, it's absolutely one of the best cuisines to explore and get creative with, and getting to know my spices was one of the first things that really changed my cooking experience. My favourite things to make are a red lentil dal, a mushroom rogan josh, and a "bombay aloo" (potatoes). My partner (also veggie) makes a mean saag paneer (spinach and paneer cheese) which I want to learn how to make, too.
Always add tamarind at the end when all the veggies are cooked. It stops the veggies from cooking further.
I quit smoking so I've turned into a part time vegetarian for health reasons. I cook a lot more now and am trying to cook foods from different countries. With that said, I've tried making dal a few times out of red lentils, but it was awful. Maybe just not to my taste, I don't know if I just don't like certain Indian food, or if it's just the red lentils. I like other lentils, but those have too much of an earthy taste. I'm going to try to cook other Indian dishes and hopefully I find some I like.

The eggplant dish is called Bharta in India, specifically Baingan ka bharta( baingan= eggplant). I must say being an Indian that your cooking techniques were spot on. I am impressed!
In the spinach curry, soaking the chana daal for about an hour or 2 in water really helps in cutting down the cooking time and also ensures even cooking of the daal. In India we usually soak most of the lentils and grains like rice or broken wheat to speed up cooking.
