Im not Vegan but this Version looks amazing i looked for a minced Meat replacement , just because i wont like to eat so much meat , i keep my Diet Flexatarian,so im fine with meat but Vegan Dishes also cool. I have fallen in Love with Tofu ,but only the Ones for Asian grocery Stores the tasty ones. And i love Chickpeas sooo much , i sometimes make Chickpea Curry with coconutmilk Tomato base and tons of Indian spices. I love it this much i created my own Spices mix , to crush it fresh for my dish every time. I cant stop eating this , the best part is you never feel blown up , thanks to all this great spices your tummy is happy afterwards.Can be made fully vegan when replace the Jogurth or just leave it.

Thanks a lot ! I made it for my new bf and he loved it ! I halfed the chickpeas with some soya mince, and messed up with the quantities, so ended with less tofu than expected x) So it was more like a mapo chickpeas-soya mince than a real mapoTOFU ! Will do it again (with more tofu haha)

If people would use soy or the meat replacements like better burger or chik’n for 75% of their dishes, it should have a dramatic affect on the environment and a significant decrease in hospitalizations. Going to be on the look out for that broad bean chili paste.
Just made this today! It’s so good! I only instead of using dried mushrooms I used normal and used corn starch. So happy I came across this. You have more than deserved my subscription!

Thank you for these wonderful videos and recipes. This looks very yummy! I would humbly suggest that anyone who has the time, cook dry chickpeas yourself rather than using canned. The flavor is SO much better. I cook a large batch at a time (it’s easy) then freeze the cooked, cooled chickpeas on a cookie sheet. Store in containers in freezer and pull out the quantity you need when you want. They are so versatile! Easy. Healthy. Delicious.

I made this but had to cut down on all spicy ingredients on acct of old hubs unable to handle. Anyway even though not as pretty, is so so delish. Replacing ground meat w rough chopped chickpeas is brilliant; also without green onions we used chopped garlic scapes from our garden. Most satisfying meal & can’t believe we didn’t miss the meat. Thx so much for this💐🌟💐

Just made/ate this, thank you! Tasy, comforting, yet fresh. The last time I had vegan mapo tofu it was a disgusting gooey westernized sweet & sour muck with synthetic neon red coloring and was as sweet as syrup. I live in Venice, LA with lots of diversity and great chefs but the plant-based chinese food options are limited. I finally ordered sichuan pepper flakes (Amazon) to make my own oil (your recipe) and Whole Foods carries sichuan peppercorns. My only major adjustment was I couldn't find fermented bean sauce/paste that seemed "clean" (the products at Mitsuwa market are filled with preservatives, msg, and non-organic wheat and soy which seemed so wrong to use since the rest of the dish was made with organic ingredients.) I omitted the bean baste instead added red miso + doubled-up on things for extra flavor: mushrooms, garlic, ginger, chili oil, soy sauce, and added white vinegar. Can you share what brand of bean paste you like using?

Hi there, I just finished the prep including the chili oil. I’d like to know are you supposed to eat the mapotofu on rice or just like that. And could I use fresh shiitake as it is widely available here.
My wife was from Chengdu. Shortly after she arrived in America, I took her to a local Chinese restaurant near Atlanta. I ordered Ma Po Do Fu. When the dish arrived, my wife tasted it and demanded to see the cook. When he arrived, the conversation shifted to mandarin so I couldn't follow it word for word but at the end of the conversation, she wrote down a recipe and cooking instructions and told him she would be back to check up on him.

Does look good for people who can't eat the meat version. I normally add the Szechuan peppercorns at the end with the spring onions as a garnish, which I think is traditional. I guess simmering them is fine though and maybe infuses the flavour, I guess the only way you can truly go wrong is by stir frying the peppercorns (acrid smoke) 😀

Should i boil my tofu before adding. Some say it makes it more firm but i have bought a extra firm tofu so do i need to boil it or leave it

Definitely gonna try this one. When I lived in China, there was a local place that could do a veggie version for me. The best thing I ate over there though (and indeed in ever in my life) was at a Buddhist temple where they made an amazing pretend roasted spiced pork out of potatoes. So delicious. Can I also request a lo bok salad recipe?

I use wood ear mushrooms instead of shitake. Wood ear gives a nice crunchy bite. Your dish will not only taste nice but will have a nice mouth feel as well 😊
Is it spicy though? I would love to cook your dishes as they look do delicious and i want to remove meat from my diet but my palate doesn't do spicy…
