I definitely need to start eating lighter again. It is so hard around the holidays and I have been in the office a lot after a summer of working outside all the time. I am already starting to gain back all the weight I lost over the summer! I do have some suggestions for overnight oats. I make them on a regular basis and I suggest adding your milk to the oats and shaking it up BEFORE you add the other stuff. Otherwise, sometimes the oats in the middle don't soak up enough liquid and it is dry. Also, to make kale more palatable, you can "massage" it. Adding some avocado or dressing to the kale before massaging also helps. That soup looks amazing! I might make that tonight!
I made the overnight oats last night, I used the 1 tbsp cocoa. If you REALLY like sweet food in the a.m. go for the 1 tbsp. But if your not a sweet a.m. kind of person use less, maybe 1/2 tbsp!
