The staples: rice and lentils, whole grain pasta and beans, bean salads, tempeh/tofu/mashed bean tacos, lazy hummus (roughly mashed chickpeas with tahini and spices) on pita. For breakfast: oats and vegan protein, toast/bagels/English muffins and nut butters. Mix up the veggies, sauces and fruit accompaniments and you're set.
I like adding a roasted sweet potato cut up into small chunks to vegan chili. It is native to Central America and goes well with chilies from the same region. I recommend trying out different dried chilies from a Latin American grocery. Grind them into powder. Much better and fresher flavor than what you find on your regular grocery's spice rack.

You were so right about left over chili. I’m eating my left overs from yesterday and it’s def a good bit better. I was lazy and just put the whole pot it the fridge and covered it when I was done so all I have to do is pop it back on the stove and heat it up for 10-15 minutes and it’s perfect ☺️

i am a young chef and trying to go vegan for a month, and i just wanted to say that watching her cut the onions and the garlic in the beginning really hurt me. If your a chef you know what I'm talking about.
Edit: I now realize that coming here was a mistake. Not that shes a bad chef, its just watching her cook doing little small things with absent technique send a chill down my spine. This actually happens a lot to me, which is why I cant be around friends or family when they cook. It's a curse.

A couple I can recommend is stretching beans into beanballs or chickpeas into chickpea burgers. Peas and chickpeas are great for stirfry protein. Chili is definitely great for making an adaptable dish. If it doesn’t taste right you can always change it a bit. Curry is the same way. Soup. Anything can be made into soup and there is no wrong way. Corn is great for filling yourself up if you need that, if you have some on the cob it can be a little ritual. Salsa is a great snack to make or buy and stretch with chips. Add rice or brown rice for more nutrients or vegetable based pasta or just white rice or regular pasta to stretch. Burritos and Mexican. Anyone can do it and it doesn’t matter what you put in. For dessert? Fake cheesecake. Easy and delicious and made with tofu and graham crackers so its super nutritious and you can make it with jam you already have for making peanut butter and jelly sammiches. Tofu has some nice qualities to go with peanut butter as well. Hot sauces and chilis and such if you need some novelty in your dish. One or two jars of your favorite sauces and spices can turn anything boring into something you love. Oatmeal, definitely and smoothies. Freeze them so they last. It’s alot more cost effective than we think to be vegan.
