The food looks so delicious I can practically smell it, but it has the same problem that strictly plant eating has always had for me: A lot of expensive ingredients and it's pretty labor intensive for the amount of food. For 6 meals and 2 snacks you need 14 key ingredients (21 ingredients if you make everything as shown), a food processor and a blender, a waffle iron (although you could make pancakes instead), plus the prep and clean-up time for all that. Those reasons are why a plant-based diet is seen as a lifestyle in North America rather than a healthy option for everyone. I'll include some of these foods in my diet, so many thanks, but as a 245 pound male musclehead brown rice and ground turkey will stay my affordable go-to carbs and protein.

Plants lack vitamin A, D3, B12, K2, saturated animal fat, heme iron, cholesterol and bioavailable omega 3. Plant nutrients are also hard to absorb due to fibre and anti nutrients (phytate, oxalate and lectins).
Eventually you will run out of stored vitamins (back from when you ate meat, eggs and dairy) and become seriously ill.
*My favorite homemade vegan protein powder*:
Powdered peanut/almond butter
Hemp seeds
Pumpkin seeds
Mix with a high protein plant milk like Ripple or soy milk!
