Start by adding the potatoes to a saucepan covered with water, and boil for approximately 15 minutes or until they’re tender. Use a small spoon to scoop some of the potatoes out, making sure to save the scooped-out potato. Use a potato masher to mash the insides of the potato that you saved. Now, add in the vegan mayo, mustard, black salt, pepper, turmeric, parsley, and vinegar. Scoop the potato mixture into a piping bag and pipe it on top of the boiled potatoes. Lastly, add garnish if you’d like.
Tips when making this recipe
- Try and use potatoes that are about the same size as an egg to make them appear more realistic.
- Black salt will give this recipe a more realistic egg-like flavor.
- The baby potatoes that come pre-bagged may be too small, so it’s best to find single potatoes that look about the right size.
The benefits of choosing vegan eggs
Eggs are well-known for being extremely high in cholesterol, so not only can you try vegan eggless alternatives for your health but to save animals as well! Eggs are a product of only one gender – females. So it stands to reason that the hatchery business only needs female chicks and not male chicks. Males are dropped into a grinding machine – tossed around by a spinning auger before being torn to pieces by a high-pressure macerator. Delicious eggless cooking and baking are much more plausible than egg enthusiasts might make it out to be! Not only are there plenty of egg replacers on the market, but there are also countless vegan ingredients that can take on the texture or purpose of eggs in any recipe you have.
