I didn't have an apple so I put an individual cup of applesauce, I think it's like 1/4 cup size. And used celery for crunch. It was soooo good! And that moistened it some also.
Will this last in the fridge for meal prepped lunches?

I make chickpea salad, with celery, red onion, dill pickles, lemon, tahini, and Dijon mustard, turmeric, cumin and fresh rosemary, it’s my go to sandwich! And non vegan love it too! This looks great too! I will have to try it.
I made this today. I have made other versions but this is my favorite so far. I did change a few things because I had them on hand. I used walnuts instead of pecans and apple I had. I also added celery. Love the crunch. For the dressing, I used PB2 not cashew, and aquafaba instead of water. I also added black pepper and red pepper flakes. I had a little celery left and stuffed it with the sandwich spread to taste test. It was awesome. Thanks!

Bought these ingredients yesterday and finally tried it this morning (with the Cedar hummus). This was sooo good! Reminds me of a tuna sandwich so grateful for this 🙂
