Just made the fajitas one using soy curls instead of tofu. I has small whole wheat tortillas that I folded and put in the toaster, so it got a bit hard and we ate it like tacos. So so yummy! And also felt really light 😍
How to make crispy tofu without oil? You can use tahini! Does anyone have any other oil-free options to crisp up tofu?

I think the asparagus mushroom fennel dish would have been awesome with pearl barly or pasta! I would have used a butter sage sauce with it!
Great meals 😋 do you still use baking mats? I am considering to buy one, but a lot of my silicone stuff gets greasy after a while and I wonder if that’s some sort of softener from the material … did you make the same experiences with the baking mats you had in older videos?
