I got so inspired that I put you on pause while I steamed some broccoli and cooked some red lentils, rise and oats. Then I of course saw the whole video!
Unfortunately I’ve never had potatoes exploding in the oven before otherwise that might be a fun experience! (or not really! 😂)
But as a tip it’s good to boil potatoes for like 5 minutes before baking them as that gives them some moisture and prevents them from being dry. I like to make a cut in the middle of potatoes because I think they cook more evenly that way. 🌱

I buy the same tofu. I keep it in the freezer which changes the texture to a more sponge like consistency. Once it defrosts – it’s crazy how much water you can squeeze out easily. Then there’s room to soak up a marinade.

Thank you for this video. Curious about your oats. So I guess in the morning you take a scoop of those oats, maybe add water or milk and then microwave, and stir really good? I need to try this. I just make a fresh batch every morning and I am ready for something faster.

can't wait for that yummy cheese sauce recipe!!! when I bake sw taters I just cut the tiniest bits on either end, then bake very long & slow at 350F for about 1 hr to 1-1/2 hr, depending on how big they are. the slow roasting seems to make them extra sweet. I've never had to poke them as that releases all the sweet juices. I do poke my regular taters before baking. hope that helps!
Great tips! When you roasted the bell peppers…. did you roast them for a total of 20 minutes and then take them out and rotate and set the timer for more minutes? Thanks
Investing in a second instant pot liner was one of the best decisions ever. I can cook things one right after the other without having to rush to wash and dry the pot before moving onto the next dish Hope that makes sense!
I’m so excited to this. I work from home so you would think I’d have all the time in the world to have lunch. I do not, it’s only 30m. After animal care, doesnt leave much time. Having things prepared would really help. Thanks Maddie!!
Excellent video and food prep Maddie. There must be something wrong with your potatoes and sweet potatoes if they explode in the oven without being pricked because I haven’t had exploding potatoes and sweet potatoes before and after I became vegan. It's probably because I have always pricked them.

The salt wash seems like it would add a ton of sodium to your diet. I prefer a vinegar wash.
In all my 65 years of life, I've never had a potato explode….until last year. All over my brand new Brevill smart oven air. Yes, it happens. Good thing it was easy to clean up!
