I made this cake today, its turned out good, it was moist but it was bitter in taste, is it because of baking soda? Isnt it too much for the cake? Or is there something else i missed or did wrong?
When I heard you say wacky, I was like OMG because my grandmother used to make a wacky cake!! I had never heard of this when I was younger until she said it and no one else I knew ever made it. So ironic! But, she made it with mayonnaise unfortunately, which took the place of eggs. So I was afraid to try hers with vegan mayo. And every time I try to make a dessert baking recipe with vegan eggs or without, it doesn't come out right. I don't like the texture, it gets too thick and brownie like, doesn't rise well, or seems almost too wet and undercooked. But if I cook it longer, it gets dry..ugh. I am so glad you have a vegan wacky cake without vegan mayo or egg, that actually looks like traditional bouncy light moist cake and it rose well!!! I need to try it now lol!! 🎂💖 And btw, I love the sifting idea!! Can you double the recipe and put them into a 9×13 or 9.5×13.5 inch pan? Will it rise properly? I'm assuming a different baking time? I've just always made cakes in those big pans and would love to just make the one larger pan for a birthday party.
I followed the recipe to a T, and although it did come out moist, there is still a sticky texture to the cake that I noticed while chewing. I also did not like the flavor. It looked like chocolate cake but I could barely taste any chocolate flavor, and the faint amount that I did taste was bitter. Sorry, while I appreciate the vegan-friendly aspect of this cake, I did not like the end product. Thank anyways though.

Hi, what exactly is granulated sugar? Is it the one between powdered sugar and crystal sugar? We don't get it here. Can I use powdered sugar instead and what will be the measurement?
