I've always wondered by Indian and other curry or tomato-based dishes are prepared this way… you work hard to reduce and concentrate flavors, but then you dilute with water? This is quite common. Why not just leave the passata less reduced? Looks great, though.

I will use fresh chopped tomatoes instead fermented tomato puree which is not fresh. To garnish I will use coriander/cilantro instead of parsley.
Looks delicious i will try making polenta to serve with it. Polenta and tomato dishes go well together.

very similar to how i make shakshuka (vegan), i usually add a pinch of vegan ''cheddar cheese'' shreds on top of the tofu to simulate egg yolks. GREAT STUFF!
