just made the tofu scramble and I was skeptical, but is really good. I didnt have beans so put snow peas and chard in it. and i used brown rice cos i didn't have any quinoa and it still worked . And it was quick. Well done Adam.

where's the meat, where are the vitamine A,B12,D3,K2 were is the heme-iron, saturated fats, cholesterol, DHA,EPA, taurine, creatine, carnosine, zinc? Instead this meal is full of constipation causing, gut wrecking fibers and insulin raising carbs? How could anyone give such a poor diet to a child?
I like the simplicity of these meals which I know was the aim, so thanks! Also found it interesting to add quinoa to the tofu scramble, I haven't seen that done before to add any kind of grain but liked the idea.
One thing I thought I'd pass on to you as I was grateful when I found out about it, was it's a really good idea to add some veg stock/broth to the pan when you're cooking the tofu scramble part, as it absorbs the liquid and as a result gives you nice fluffy tofu such as scrambled eggs would be, plus it flavours the tofu as well as it soaks it up like a sponge and is really extra yummy done this way. Give it a try and let me know what you think! ๐
