Looks great!! My Grandmother used to make a very similar pumpkin curry that was outstanding. The only difference was starting with whole seeds and spices, roast them in the dry pan, add the garlic onion & ginger, sautee for 5-7 mins, then the masala, fry for 5 mins, then deglaze using fresh tomatoes then add the pumpkin etc.

If you keep cooking the nuts until the sugar becomes a light brown caramel you will get "garrapiñadas" which is a traditional spanish sweet snack 🙂
