Hi everyone – so my computer died about 4 days ago. An issue with the graphics card, so I've been editing on a VERY old Macbook Air and ick, as of yesterday had to spend A LOT of money on a new computer (haha, great time, right? But when is it a good time to have to spend moneyπ) Even more, it's a PC…and although I've been taking a few courses on Premier Pro (pretty much the industry standard), I'm not sure I'm ready to dive inπ’But there's no better way to learn than to be forced to dive right in. Would love to see more desert, possibly with roses like Lizi Qi and Dianxi Xiaoge have done, but with rosewater. I have put rosewater in strawberry cake mix and it was… interesting π€

I recently had good success making a whole wheat eggless apple cake. Yours looks like my grandma made it with a dozen eggs and lots of butter.

Wanted to point out some things about boxed cake that make it very different than -scratch recipes, case people want a boxed cake mix style, but boxed cake is vegan and only requires tap water to be added.
Boxed cake is a little more than half sugar by weight, so they are very sweet, but furthermore it changes the chemistry and makes it have that ultra light crumb. There is added flavours in there, so the flavours are super-intense. There is what you would call modified starch, which means it was pre-treated so that it absorbs water and forms a gel without heating, think instant (not cooked) pudding mix.
There is fat that has been processed into the flour very evenly, coating it, so it is well dispersed. The flour and sugar used are very fine.
All these things add up to make it into exactly what you imagine a "perfect cake" to be. It's also extremely forgiving. This is no knock against home made cakes, or your version; boxed cakes are a completely different animal though.
Whatβs the purpose of the non-diary milk in this recipe? Can it be substituted for water?

Wow that crumb is beautiful! I wonder if this cake would work as a batter for steamed egg buns! I've been looking for a recipe to veganize those sweet little puffy buns everywhere and couldn't find one but maybe this would work!
