It's the ghoti bangaal divide. My Bangal mother used to cook posto without onion. My ghoti mother in law cooked with onion.

Love this dry aloo posto. I just fry the onion in kadai with aloo when the aloo is already half fried. It gives a flavour of almost fried onion but not deep fried.

Fried onion garnishing is innovative. Aloo was prepared mostly on veg days, so I dont think I had onions with aloo posto. We had a little gravy in the preparation. Another preparation of posto mom prepared are bhaja (fried) posto and kancha(uncooked) posto where she added onions.
Thanks for a wonderful receipe. I tried your version this time and it came out too good. My husband is a Bong and I am not so I m really scared to try out authentic Bengali receipes. He loved it so I think I m passed and tons of thanx to u. Another thing, my MIL wud put fennel seeds in tadka and not kalo jeera and while making posto bata she ll add a small piece of ginger, rest leaving onions is same. I loved ur version too🙏
