    Don't remember when was it that I watched this video (I watched all your videos once I found you, by accident, cause looking for "gluten free" on youtube gives you ton of garbage) so, then. Ever since then I was looking for that ceramic muffin tray. Finally found it 2 days ago, bought two of them, just in case (they only had two), and now, I'm finally testing them. I love to make those, you've probably seen them "three ingredients banana pancakes", which to me personally don't look anything like pancakes as they fall apart, so I instead pour them in a muffin tray, and bake them, it's a mix between that recipe, and these egg muffins. Although, I don't limit my self to just three ingredients, I add spices, and fats, and some gluten free flowers. when it comes to all these additional ingredients, they will work even if you stick to just the main three, eggs, bananas, and salt. but if you're gonna add flours, keep in mind that you'll need something sticky, like xantan gum. I was trying forever to make them with just coconut protein, and it won't work, they just crumble, so I have to add gluten free flour which contains some gum and helps it be a muffin

    I like egg muffins, but something that improved my egg muffins game was to add some flour and baking powder, it takes that egg sogginess away and the muffins dont deflate afterward. Especially when i use egg whites instead of the whole eggs.
