I loved the African Thai Stew, with some changes:
1. There don't seem to be 19 oz tins of things on the east coast of the US, so I used the available 28 oz tins of diced tomatoes and chickpeas.
2. Subbed 1 tsp ground ginger for the fresh, just easier.
3. The half-teaspoon of black pepper sounded like a lot, so reduced that to one quarter teaspoon, and added 1 tsp salt.
4. Added a full cup of peanut butter, and that really gave this the wow factor, but it does make it more stewy than soupy.
5. Used a whole bell pepper, as a half seemed kind of silly, given the amount of stew this makes, and then what to do with a half a pepper?!
6. The one real change, was that I added in 2.5 lbs of skinless, boneless chicken thighs. Obviously no longer vegan, but it becomes a really hearty, wonderful stew.
It could use more cranberries, or raisins would work. Serve over rice or noodles. Oh, and just threw all of it together at the same time into a 7 qt crockpot and cooked it on high for 5 hours.
