Ingredients:
(Serves 12)
Base
– 1 cup Medjool dates (soaked in hot water + drained)
– 3 cups almond flour
Gooey centre
– 1 cup almond butter
– ½ cup pure maple syrup
Chocolate top
– 80g dairy-free dark chocolate
– 2 tbsp Coconut Oil
– Sea salt (for sprinkling)
Instructions
– Place the drained dates into a food processor. Add almond flour and pulse until combined.
– Press the dough with your hands in a small, square baking tray to create the base. Place into the fridge to firm up.
– For the gooey filling, add almond butter and maple syrup to a bowl. Stir to combine. Add the filling on top of the base and place in the freezer to set for 30 minutes.
– Melt chocolate and coconut oil in a microwave-safe bowl, 20 seconds at a time, stirring in between.
– Pour the melted chocolate on top of the filling. Place back into the freezer for at least an hour.
When the chocolate has set, remove it from the freezer and cut it into squares using a hot, sharp knife. Enjoy 🤍
