3News’ Stephanie Haney and her niece Aubrianna Grisez share an easy recipe for a meatless option to add to your dinner table
CLEVELAND — With all kinds of guests preparing to gather around dinner tables on Thanksgiving, even the biggest turkey lover may want a little help when it comes to accommodating people who don’t eat meat.
To help out those who want to offer at least one meatless option for friends and family to snack on, my niece Aubrianna Grisez and I suggest the incredibly easy and very tasty option of vegan meatloaf.
Aubrianna is the vegan chef of the family, and she’s come up with a recipe that includes just 9 ingredients, easy preparation, a quick cooking time, and guaranteed-to-please results.
The recipe is designed to be completely vegan, which is why it calls for oats instead of bread crumbs (which may contain milk).

Jay, an avid meat-eater, even went back for seconds after enjoying his first piece of Aubrianna’s vegan meatloaf! Betsy suggested the recipe would also work well for vegan meatballs, and we agree.

Preheat your over to 425 degrees Fahrenheit before you begin mixing your ingredients together.
In a medium-sized bowl, combine the package of Beyond Beef, oats, 3 large pinches each of the minced garlic, onion powder, black pepper, paprika, and parsley, and a “generous” amount of ketchup. Mix this together with your hands until all of the dry seasoning are consistently mixed in with the Beyond Beef and ketchup.
Take your mixture and form it into a loaf shape, and place it into a small loaf pan or baking dish.
Top your loaf with more ketchup (enough to cover the entire top and sides if they are exposed), and sprinkle a generous amount of brown sugar on top of the ketchup.
Place your glazed loaf into the oven and bake for about 25 minutes. Check to make sure the vegan meatloaf has browned and the brown sugar has melted into the ketchup glaze before removing from the oven.
Let cool and enjoy! This recipes serves approximately 2-3 people and can stand alone as an entrée or make a great addition to the side items on your menu.
