i would replace that bun with rustica instead. Banh mi is special because it has a nice crunch and not the soft texture like a hot dog bun.
THe bread u does not look good lol i would prefer a crunch just my preference .

I feel like the tofu needs a marinade of some kind. Plane seems, well too plane. Maybe just use the marinade thats on the carrots.
There is a Vietnamese sandwich shop near me and they marinade their tofu for their bah mu in something. I don’t know what they do but it’s super flavorful. It’s yellow, so I’m thinking there is some turmeric. Maybe salt, suger, lemon, chili, and turmeric, and oil.
Thoughts?.
