When your watching the Alexa segment and your own Alexa starts answering hahahahah
I love to meal prep this recipe and then just eat it cold, it tastes just as good cold imo. π
Ingredients: 1 sweet potato, 1 red onion, 1 avocado, 1 lemon, radishes, cilantro, minced garlic, olive oil, couscous, chickpeas
1. Preheat oven to 425
2. Chop onion and sweet potato
3. Put on baking tray, drizzle with olive oil, add salt and pepper
4. Cook for 20-25 minutes
5. Cook couscous
6. Drain and rinse chickpeas
7. Season chickpeas with chili powder, cumin, salt, pepper, mix to coat, set aside
8. Chop radishes, avocado, lemon, and cilantro
9. Leave half of the cilantro aside
10. Take out a big salad bowl
11. Add avocado, half cilantro, radishes,
12. In a small bowl make the chimichurri dressing- other half of the cilantro, some cumin, big spoon of minced garlic, olive oil, juice of half a lemon, mix and set aside
13. Add couscous, and cooked sweet potato and onion to the salad bowl with other ingredients
14. Roast chickpeas-optional
15. Add chickpeas to bowl- toss everything
16. Add chimichurri to bowl and mix
I'm gonna try this recepie in just a few mins and will roast my chickpeas in the oven and use baby spinach instead of cilantro π Also not adding the avocado π
Edit: Just made it and even roasted some red bellpeppers and added them as well. Was really good! A bit dry so a sauce is a must, I made a crΓ¨me fraiche and garlic sauce π Thanx so much for the base recipe!

Get some weights for the pool and do leg and workouts in there the water resistance adds an extra weight to it! U can look up water aerobics and the best part is when u get to hot u can just dunk ur head in the pool and cool off!
a little tip for mealprepping the couscous salad you showed: you could prep everything, heat it up and just add fresh avocado (and radish) afterwards:)

So we made your recipe today, Iβm just so over trying to figure out what to cook. Iβve got to be honest, as I was putting it together I was thinking βthis is going to be a hot mess.β My husband asked me βwhat the heck are you making?β I donβt even know what I was thinking, I donβt even like chick peas or radishes (which I forgot anyway). In the end…we both liked it! My husband even said βadd it to the rotation!β A couple notes: we arenβt vegetarian so I added some plain chicken, it was tasty! I think shrimp would work well too. I added too much garlic to the dressing π. I used fresh, not from a jar and it burned πππ. I reserved the avocado and just added it to our bowls since we had a ton of leftovers. Tomorrow we can just reheat the leftovers then add the avocado and dressing. Bonus, my two littles enjoyed the chicken and the couscous, no extra meal prep for my picky eaters!

Yes, you can call it yours. Also, you can toss those chickpeas onto the same pan with the sweet potatoes and onions. If you don't mind them getting a bit crunchy, the whole time, and if you want them still a bit soft, add them after 10-15 minutes. It will make it an even shorter cook time total.
I had leftovers and put it on top of an arugula salad with lemon vinaigrette, so yum π I made a parsley red wine chimichurri tho.

You could probably just eat that meal cold the next day, I love cold quinoa salads with fresh veggies, I imagine its similar! Looks so good!!!! <3
I made this dish tonight following your directions : AMAZING!!!!! I eat 100% plant based and this meal was delicious and very satisfying! I just omitted the radishes because I didnβt have any on hand

Chimichurri is usually served with barbecued asado. I never thought to serve it with other dishes. What a great idea.π₯°
I've been making similar grain bowls at home too! I'll try your version next time. Try adding spinach and subbing an avocado aioli sauce.
