    Chapchae sounds very siimilar to Hokkien dialect which mean mixed vegetables. It's a common dish amongst the Minnan people. I don't know if it's coincident.

    I am so glad I came across this great gal sharing her expertise, I will make some noodles half done and then let them finish cooking in the delicious base. It will be a grand way to use some foraged greens and mushrooms too!! Thank you so much 💖 for helping with your great tips. I like to dry saute the mushrooms too, or use dried, so flavorful!! You know it's great when they lick the bowl… l used to think…grr bad manners, not anymore, now I smile.

    You just drain the water from the spinach but never squeezed them. You wasted the nutrients of the spinach which is so important.

    ⚠ When she says at 2:57 that you can add 'any soy sauce' it does not mean dark soy sauce. That's the only one I found where I live. Rookie mistake. Still sick after 14 hours 🤒
