Rising Jamaican American vegan restaurant mogul, Pinky Cole, has released her highly anticipated first book, Eat Plants, B*tch: 91 Vegan Recipes That Will Blow Your Meat-Loving Mind. In the book, the serial entrepreneur, noted philanthropist, and prolific restaurateur, brings the trademark combination of attitude and flavor that has made her vegan restaurant chain, Slutty Vegan, a smash hit in every location it opens.

“Eat Plants B*tch is not just for the vegan. This is for the person who just likes to eat food. They can try these recipes and not feel like they have to compromise the things that they like,” Cole explained in an interview with Yahoo! News.
The book is packed with recipes that aren’t looking to save you from a life of eating meat. The goal, Cole says, is to teach people how to prepare vegan food that’s more delicious than its carnivorous counterpart. “There’s a black bean burger in there, with black eyed peas. It might not sound like that would go good in a burger, but it’s so good,” Cole shared. “And, I feel like mushrooms are underrated. Mushrooms taste better than chicken if you ask me. I have a really, really good mushroom recipe in there.”

Cole synthesizes classic American pub cuisine with her own Jamaican heritage to provide over 90 plant-based recipes leaving readers spoiled for choice.
