I've been making this for decades & over time I started chopping my raw cashews for a quick soak. No need to overnight them especially when you crave this dish on a wintery night. I like it with egg white birds nest noodle, you can cover the best with boiling water from your tea kettle & cover it for 8 mins then I add noodles to my stroganoff mixture for Carrey over cooking so the noodles can absorb the flavor as well. I sprinkle with red chili flakes & parsley 😉
This year I am hoping for a Thanksgiving but roast with mushroom gravy and mashed potatoes. I am hoping you cover this as I really appreciate your photos and videos. It would be great to follow that with what to do with Thanksgiving leftovers…even though you're not an American you are just over the boarder. Help us look forward to eating leftovers this year. Maybe butternut squash or mushroom dumplings or vegan pot pies? Something that if we take it to work it will make our co-workers jealous and want to try plant- based choices?
Thank you for all wonderful recipes,,I would like to know can I use wine instead of wiskey and what the different???? Or balsamic vinegar , or vinegar??? Thanks
Looks like you're using raw cashews. If that is specific to the outcome of the dish, please let us know. I would think using roasted, salted cashews wouldn't provide the creaminess of the sauce. (I dabble in raw vegan food.)
I’m trying to get a definitive answer of nut milk versus cream. In this recipe you used one to one, in your regular nut milk recipe it’s two to one, water to nuts. Thank you.
I just made this, working from the recipe as given in your second book, and am eating it as I type this. This is the third vegan Stroganoff recipe I've tried. From the first bite, I knew that yours is the winner: subtle, yet irresistibly delicious, beautifully blended flavor, rich and creamy, but not heavy. I used royal trumpet and cremini mushrooms, and whole wheat fusilli pasta. My first time ever cooking with whiskey, BTW; again, I'm pleasantly surprised by how subtly it adds to the overall flavor, blending completely along with all the other ingredients. This recipe is definitely a keeper — totally high-class cuisine!
I'm making such good dishes lately due to your cookbooks and channel. Your cookbooks are pieces of art, yet I use them nearly daily! Tonight, I made a pasta dish of yours with mushrooms, and it was so good we were just laughing like, "Is this for real?" haha. I can't wait to try this one in the video with whiskey and a variety of mushrooms! 🙂 Grateful for your channel. 🙂
So enjoying your recipes! This mushroom stroganoff sounds delicious, and so easy. As soon as I find a variety of mushrooms to use, I'll be making this one. Thank you. I really like your videos.

Wil, do any other type of nut make a good creamy base, similar to cashews?
