    Love the simplicity but, yet well thought out vegetarian meal.
    Bring vegan I'll substitute baked tofu for the eggs and add some cumin and salsa. This is so healthy, simple and delicious

    Variation #2 Nicoise salad use white beans, string beans, and arugula with some Italian seasoning Or vinaigrette. Tuna or tempeh instead of eggs. Few Nicoise olives grape tomatoes, onion. Canned potatoes instead of rice. You have me so motivated.

    Love the poached eggs over the rice. I know everyone's diet is different but would this kind of recipe help with weight loss even though it has the rice in it? I've been wanting to do meal prep for a while but I just never have time. I work 7 days a week:( Your recipes are great because they don't look daunting and extremely time consuming. I am hoping by prepping it would stop snacking and overeating/late night eating.
