I really need to get into the habit of prepping – meal times would be so much easier! I've just made a tray of that granola (for the first time) and will have for breakfast tomorrow with some vegan yogurt. I''ll also be trying the cabbage enchiladas again this week, but with red cabbage this time for a change. And I will definitely try your seitan method. I've been vegan for about five years now, but you are changing the way I cook and eat, Carol!
