Just finished making this. Wow. Nice job! I made some substitutions: didn't have eggplant or sweet potato or cherry tomatoes BUT did have Zucchini, potatoes, grape tomatoes and some other variation of sweet potato. I then added the remainder ingredients and it was delicious. Smooth and tasty soup 🍲
Love making sheet pan veggie soups like this it’s delicious, I do this With garlic, onions, heirloom tomatoes and one vine ripened tomato with some spices roasted put it in a blender with a little bit of lemon juice and just a smidge of Apple cider vinegar and oh my goodness it’s heavenly
Im not vegan but i bought eggplants because they were pretty and did not know what to do with them. I happen to have all of these things except for the celery and i dont have sweet potatoes so im going to do regular potatoes and add some broccoli. Going to make this for dinner tonight thank you
You do not have to be vegan to try her recipes🤣 I'll be trying this out❤️ this is the kind of soup you can safely eat seconds and thirds of because it's entirely veggies🙂 harder to build fat when all you are eating is veggies❤️ so it's a diet friendly meal to pig out on👍
