I used a package of konnyaku in a Kenchinjiru for some bulk, but these recipe looks more tasty. I will try it out. I am now comfortable with using butter with soy, sake and mirin and it really elevates sauces. I read that it is high in calcium and dietary fiber, which matches the diet I am trying to cook for.
