    With the cost of everything, there is so much more of the leeks I would be chopping. The top 2-3 inches & the bottoms along with any wilted leaves go with my stock veg scraps.

    The leeks i found today were pitiful. So sad to watch it all disappear in front of our eyes. I can’t find fresh herbs. I grow my own but seriously this planet is on life support.

    I made this tonight and it was so good. I don't have an immersion blender, so I was a bit nervous. I smashed it up a little with a fork. We used beef broth, because that's what I had on hand. I added parsley and bacon on top with some garlic parmesan moon cheese and served it alongside rye sourdough bread. Was surprised that we all liked it so very much. Thank you for another wonderful healthy recipe.
