Helen, do the cucumbers have to be cut the way you did it, in large chunks?? I've had it like that before, and the large chunks can be a little overwhelming in your mouth.
I live in Barbados and I just discovered your channel. I became fascinated by Korean cooking through watching Korean films. I find the food beautiful to look at. The way vegetables are used and make them look so tasty. Living where I do, it is hard to get these ingredients. I am glad I discovered your channel, I will learn the recipes that match the ingredients available to me. Learnt some from other channels. Thank you!
Just curious…why do you have a preference regarding the type of cucumber? From watching all these videos on kimchi, it seems like the fermentation action is driven by the flour/water mixture (which would basically turn into a sourdough bread starter if left in a jar by itself). Do the particular vegetables you put in the kimchi really matter or can you use any vegetables?
i think i can manage this better compare to nappa cabbage kimchi. you speak so clearly and eloquently. it's music to my ears…i'm hearing the crunch of the cucumber..thank you for the recipes! gonna watch more in the days to come.

How come the one that has been fermented sounds crunchy and mine is very soft almost soggy after the fist day? Do my cucumber have to be big? All I had was small snacking cucumbers. How long can I keep cucumbers in the fridge fermenting? Thanks for your videos. I appreciate all the work you do for us. Be blessed.
I can't stand when u make all of those smacking chewing noises. If I wanted to hear that I'd watch a 5 year old. Love ur recipes but not u chewing and smacking.

I have some old fish sauce that was dark when I bought it. I found it’s a great part of a marinade for steaks.
why do you salt wash them what does it do?
Can you use pickling cucumbers?
