All these Italians telling you to keep it simple 😂. You do you dude. If you like it the way you made it, keep at it. Everyone will always be a critic, but hey, this is the US, where the best fusion food has been created. So keep experimenting! Eventually you'll have an amazing sauce that you can call your own! Traditional is an option, not a requirement.

i don't really get the point of wasting half a litre (plus) of water for the purpose of peeling the tomatoes if they are finally going to be blended together with the big chunks of onions, garlic and carrots anyway.

Sit the tomatoes in pot & pour in boiling water and let sit. After 10 minutes, drain and then pour in cold water and leave to cool off for 10 mins; the skins will peel off much easier. (Let them cool off, o/wise you'll burn your fingers trying to peel them.) You're welcome.

As a non-vegan, the last time I was in Italy, the BEST meal I had was spaghetti pomodoro. Amazingly fresh tomato sauce with perfectly cooked al-dente pasta. I STILL DREAM ABOUT IT TO THIS DAY

Vegan food in Italy is very expensive and portions are too small 🙈 I hope you had a great time in here anyway!
As an Italian I suggest not putting vegetable broth into the sauce and add basil, it makes it super yummy But apart from that, your meals always look so good!!
