I eat plant based. Here is a tasty simple meal that I can eat day after day. A bed of rice, topped with sauteed onions and carrot, steamed chopped kale, peas or bean of choice, plant based cheese sauce (or you could sprinkle shredded cheese if you want dairy), a titch of hot sauce, and a few sauteed mushrooms. Sometimes I use soy sauce instead. A dash or salt on top and you are good to go.
Thanks for the recipes! I've been vegetarian for most of my life, hated meat as a kid. One fave recipe is one for Glamorgan sausages; chopped leek, breadcrumbs, an egg, grated Cheddar, chopped parsley and a bit of flour for binding. Mix together and form into sausage shapes, if preferred you can roll them in milk and coat with breadcrumbs. As it's a bit messy I make a big batch, last month I froze enough for 6 fry-ups!

hi Queen Liz and King Dave, it's easy to cook some vegan soup (and with bread, it's enough for a complete meal) especially "mercimek corbasi", turkish soup with red lentils, many recipes on internet!!! another great salad is chickpeas with beetroot and onions (and a fst recipe because tou can use a can of chickpeas… just slice beetroot and onion!) Great ideas!
I'm not into curry & flavors like that, but the veggie meal ideas are helpful. Salads & beans on toast are favorites for me.
Beans on toast is a foreign concept for most Americans. I grew up eating pork and bean sandwiches for any meal so it looks like a open faced sandwich to me.

This is great thanks! Just found out yesterday I have multiple gallstones. Didn’t know until I had an ultrasound as stomach was bloated on one side. Looked up reasons – have to reduce cholesterol & eat more fruit & vegetables. Love tofu & used to make it. Will definitely try these recipes.

I have porridge every morning (I'm a creature of habit!) , always with banana and with another fruit such as strawberry, blueberry or blackberry. I've never made my own baked beans before, so I will definitely look into doing this because can do them without adding salt. Out of curiosity, what was the cost of ingredients for making your own baked beans compared to purchasing a 410g tin …..not Heinz cause they've increased their prices of all their products to silly money. I've purchased M&S baked beans for 50p a tin, but there are cheaper tins than M&S
I've got something on my list about this with reference to keeping your pH balance right, around 7.5, which in turn you won't become ill and have a loss of wages. pH can be tested with litmus paper in the mouth for about 5 seconds.

Lovely recipes! I like to add hot curry powder, dried chili peppers, garlic, nutritional yeast, blueberries and a smidge of maple syrup to my oats. I'll be trying new recipes soon. Thanks for doing vegan/vegetarian recipes.
