The skin on the kabocha squash is traditionally eaten, actually soft and taste good. This is coming from someone who doesn't like the skin on butternut squash

These recipes look delicious! Thank you for sharing. Faith at The Conscientious Eater blog has a good sweet potato brownie recipe that's not wet and is fudgy and delicious. I sub the oil for applesauce and they still turn out great.

I keep that tofu scramble mix on hand in my pantry all the time! (Samβs from It doesnβt taste like chicken) So good and easy. I sometimes add a splash of plant based milk to it when cooking too, to make it a bit creamy.
