    These are great! Not having leftover rice or cauliflower in my fridge at the moment, I put 1 cup of uncooked rice, 1.5 cups water, 1 can of chickpeas, and 1 cup of broccoli into my instant pot for 4 minutes. I proceeded putting this mixture and the remaining ingredients into my food processor while following your directions and they turned out perfect.

    Is cauliflower rice just minced cauliflower? And does the chickpeas need to be cooked or anything?
    I take it these can be fried the old fashioned way as well, though they're probably healthier this way (I don't have an airfryer, but they look so good… x'D)

    I just made these for breakfast this morning, and they are amazing! Sadly, I am out of chickpeas, so I did not add any (I definitely will next time). I added some shredded carrots and scallions to them. So delish!
