Iโm a newbie , managed the Spring onion pancakes without Xantham gum ( as hadnโt arrived in post yet) , but they werenโt too far off yours and tasted delicious . Today is Celeriac and Broccoli mash day , then this gorgeous looking cake and the Cauliflower fritters tomorrow .

I made this cake twice.
The first time exactly according to the instructions. It was tasty but I lacked seasoning. Maybe because I'm used to Dutch/Scandinavian carrot cakes that have more hot spices.
And I didn't feel the carrot enough either.
The second time I already felt more confident to change a little –
To reduce carbs, I replaced the almond flour with ground walnuts.
In addition to cinnamon, I added freshly grated ginger, half a teaspoon of cardamom and half a teaspoon of ground cloves.
Instead of one cup of grated carrot, I added 2 cups.
Since ground nuts are more moist than almond flour and I put more carrot so I added another 2 tablespoons of dry coconut and 2 tablespoons of oat fiber.
The second time I gave up the cream because I went a little overboard with the calories recently…
I recommend these changes, the spicy version is tastier not only to me but to everyone who has tasted it.

This is a wonderful recipe! I also add nutmeg and ginger in addition to cinnamon and I love it! I've also subbed the water for vegan milk, and that was great. Even substituted the carrots for sweet potatoes, and it was amazing!

This is a great recipe. I add a variety of spices to make it more of a spice cake. i also use watermelon seed flour since I am allergic to almonds. This is my daughters favorite cake and mine too!!!

Iโve made this several times. Itโs a lot of time/work, but totally worth it! It makes a lot and stays moist for a week in the fridge covered up. I do have to bake it much longer than suggested, maybe almost twice as long. This is one of my favorite things. If I didnโt know it was vegan/grain and sugar freeโฆIโd still be blown away!

Made this cake for trial before an event. Became a mess.. Extremely dry and compact on top even if I took it out earlier and were careful not stirring too much.. The recipe needs much more moisture and way less flour. If it at least would have been tasty, but unfortunately not at all. Very sad for the waste of ingredients, but very grateful I didn't trusted the recipe and found out same day as the event. Maybe someone else has luck around it tho.
Is the coconut cream tasty or does it need stevia drops? Coconut cream isn't sweet I thought
