Hi eggs are so expensive here in the USA and you have given me a way to save money by supplementing with legumes. What a great idea and I love the carrot and corn fritters. I will be making both. Thanks again. Virginia USA.

Those are good tips and the fritters look delicious. My corn fritters are just flour, egg and creamed corn. I sometimes add cheese if I feel like it. Delicious with potato soup.

Great ideas, Lizzy. Will definitely try those corn fritters and carrot "bargees?" – never heard that term before! These days it seems like the checkout clerks are always surprised when I pay cash – they have the debit/credit machine all ready until they see me digging in my purse for paper money. I do hope we never get to the point when we can't pay with cash. It keeps me on my budget, apart from the security problems with using cards.

Hi Liz, thank you, lovely ideas and recipes 😊we have grown pumpkins and butternut squash for first time this year, what a revelation, so productive and versatile. I have put mashed in layers between meat sauce in lasagne and it is delicious.

Tip when cooking with turmeric – wear a tea towel or apron over clothing when eating as the turmeric or curry can stain fabrics. I’m cooking a frozen chicken today I bought for Christmas but didn’t use. Making several meals to freeze – soups with chicken wings, stew, baked breasts & legs with potatoes & pumpkin & frozen veg. Thanks for the beans or lentils reminder. I’ll cook them now to add to the soups & stews. I keep round & rectangular Chinese food containers in the freezer rewashed & put them back in empty so zi know how many meals I have to make. Having day surgery this week so meals will be cooked & won’t have to think what to eat with some salad. Oranges & bananas are on special here. I freeze them too for juice, desserts & mixed peel.. Bananas make wonderful ice cream. Spent some money this week – pharmacy: inhalers, another grabber to pick up things, donut inflatable cushion for comfort, priced a shower chair & over toilet seat for later. Also bought sink plugs & wooden crates for organising – the large ones were sold out as they have many uses so bought small – my wardrobe rack on wheels looks great now & donating clothes too small unless upcyclable. Chopping off & hemming long dresses to be more practical to fit in the wardrobe & make bags, headbands or scarves with the material cut off.

Always great advice, love the recipe ideas. I didn't know you could freeze the chick pea water to use later so I will definitely be doing that. Going to try the sweetcorn fritters as well, they look tasty.

Always remember to check internal temperature of food being reheated especially pies and chicken. Incorrectly reheated food is probably the biggest cause of tummy bugs🐔

Hi Liz, thank you for great ideas. 💡My sweetcorn fritter recipe uses a can of creamed corn, leftover cooked rice, half a cup of selfraising flout , egg and seasoning. Makes a bunch of fritters and you cant tell there is rice in it. Lots of love. 🌹

When serving chili (Monday), my family liked warm cornbread. I would use a cheap cornbread mix. My family liked it sweet, I would open a can of corn and substitute 1/2 the milk with the liquid from the can and a few corn kernels. To the leftover chili was added macaroni, (Wednesday) two days later. The third time was added the corn from the can. Each of the additions changed the taste and/or texture, extending the chili inexpensively. I used to get pasta free or for less than $0.20 a lb. corn was either 4 or 5 cans for a $1. Best I can do nowadays is $0.75 for macaroni and $0.33 a can of corn.

But I’m always looking to get ingredients cheaper or on sale. Example; this week Aldi has 16oz (1 lb) of shredded cheeses for $2.50. If the cheese will be cooked, it can go in the freezer for later. Otherwise, recipes with cheese will be on the menu.

Top tips as usual 👍 Thank you xx
If you're using pumpkins don't throw the seeds away. They can be washed and then roasted as a lovely healthy snack.
I add a desertspoon of full grain mustard to the sauce when making macaroni cheese.
