This looks delicious! I'd add some avocado too, it make a great light summer meal. Will 20 minutes soak be enough for the chia seeds to absorb the moisture a d become soft?
I thought it needed a couple of hours, so it won't absorb the moist for the intestines and would create serious abdominal pain.
