Lucky here in Australia, most places sell loose fruit and vegies, not wrapped in plastic. ( not Aldi though, so much plastic packaging 😞)

Great video Molly (including your little ** ** moment cutting your sweet potato 😉…) I often do the curry from Lucy's book but have never swapped out the butternut squash but I will try that next time I cook it❤️. Like yourself I always try and get plastic free but find when I go round the supermarket the ridiculous packaging makes my heart sink. So pleased you treated yourself to the Nutribullet, they are amazing. Sending love to you all up there in the Highlands xxxx
Great video. I used to eat a LOT of soup but since going vegan my love of potatoes has taken over and it's usually potatoes (cooked in the airfryer) for lunch. Or salad in the Summer (like it is now here in Australia). I often swap sweet pot for pumpkin/squash in recipes.

Your recipes look scrumptious! I agree, porridge is the best. I need to improve my organization when it comes to shopping: make lists of what we are going to eat etc. And I need to improve the amounts… I always end up buying too much; but, this is a work-in-progress and I am getting better. Your curry at the end looked amazing! I love Nairns; always get those when we are in UK… love them with a cup of tea. 😊 x

Do you soak your oatmeal in water overnight ? And if you could share the quantities ? Thanks so much
I love savory oat groats for breakfast. I pressure cook the soaked groats and doesnt take long at all. I eat with wilted greens (fresh in summer, frozen ones in winter like collards, kale, turnip greens, etc) plus sauteed mushrooms, any leftover beans/cooked veg, forkful of fermented veg like kimchi or kraut and a sprinkle of sesame seeds. I have heart disease from elevated lipoprotein (a), its similar to familial hypercholesteremia, so I cant do any tropical fats like palm or coconut oils…too much saturated fat. So we lean into Japanese curry. I dont use the store bought cubes (palm oil) but Just One Cookbook blog has a great DIY curry roux recipe that is really easy. We love it with kuri (haikaido) squash, zucchini, mushrooms, eggplant, tomatoes, bok choy and tofu. I live in Seattle, so the idea of cold smoothies in the winter not my jam, so I have started making cookies with my vegan protein powder. Its defrosted ripe bananas, mashed with baking powder, vanilla, cocoa powder and the protein powder (which includes stevia). 2-3 cookies with a mug of tea and soy milk is great. I bought a soy milk maker back when the pandemic started and now make it from scratch. Really easy and so cheap, but I have room to store 25# bag of black soybeans. The milk is a lovely lavender color. I make alot of veggie burgers too with various bean/grain combos, my current favorite is brown rice, edamame, peanut powder, carrots and red curry paste. Yum.
Have you thought of getting a veg box eg from a company like Riverford? Great quality, organic and no plastic! Or there are often local greengrocers than do their own veg boxes. Not sure if you are too remote for that!
Get frozen sweet potato chunks instead far easier to use 😊
