I have been wanting to try this for a while and finally made it last night. This was fantastic. I love it. My non vegan husband who was having homemade spaghetti and meatballs wanted to try it and really like it. He said I could’ve just made him that!!! In the original sauce, the fixed ingredients for 6 people include
some broth
½ cup of milk
½ cup of wine
300 g tomatoes (sieved or peeled)
300 g beef mince
150 g pork belly bacon
50 g celery
50 g carrot
50 g onion
Salt and pepper
If these are not included in your sauce, it is not Bolognese, so you need to change the name, more like "Vegan sauce" . In 1982, the authentic recipe was filed by the Accademia Italiana della Cucina (the Italian Culinary Academy) with the Bolognese Chamber of Commerce.
Yup. Chop, Add, Chop, Add…I'm under 5 ft and postmenopausal, so I cannot eat that many calories in a meal. When making bolognese like this, I add eggplant instead of sweet potatoes. Using a high amount of non-starchy veggies, I keep the calorie count around 400. Sometimes I eat the sauce over spaghetti squash or zucchini noodles. Because I always cook my own lentils, I don't use lentils in summer but make a quick vegetable sauce with whatever is ready to pick in the garden. Plant-based eating is incredibly user-friendly and creative.

I can't cook pasta & veggies + lentils any other way than as a one pot meal on zero in the Instant Pot, and let the steam out straight away. So fast & easy. Dump it all in, no need to stir until done, and I use dry lentils too. Just rinse them.
Can even heat the water as you chop, and throw the veg in as you chop. Less mess which I know you appreciate. Comes out starchy not watery which is nice. Yum, yum.
I made this last night and it was delicious. So easy – no measuring needed, I had half a zucchini that I added in also. I will definitely be making it again. Thanks for a great recipe!

Great youtube as always and if I was going to do that I might put it on top of the salad or kale instead of pasta if in strict weight loss mode! I love the moment your daughter puts her arm around your shoulder so loving like she's really on your side and she really wants to support you! She's so young yet putting her arm around your shoulders, thumbs up like that of someone so much older and filled with so much wisdom and love in their heart.
loving this Chels. especially the bit about throwing it on sweet potatoes! i couldnt eliminate the noodles altogether but i certainly will dice steam then airfry a big sweet potato and put it in my bowl first. Then I will add a smaller than usual serve of my cooked pasta, then heaps of vege bolognaise sauce on top of the lot. THANKS for that.
ps…i never used to find pasta filling for very long either. 3 hours tops. Then i did a taste test thingy but for satiation, by putting a bowl of pulse pasta (it was chickpea) up against normal pasta. I know i stay full no more than 3 hours after standard pasta but i didnt think of food for close to 5 hours after the pulse spag bol. yay!
I have never thought of putting sweet potato in 🧐 does it break down and become a thickener?
I like pasta but I don’t find it keeps me full as well as other starches.

Can you do a video with meals that you would eat in pregnancy? I have a BIG appetite and I am worried I will gain too much weight, but at the same time I don't want to restrict myself from the nutrients the baby needs.
