I have made this in casserole phone before using some corn tortilla chips that needed to be used up. So I made a layer of the chips and then put on the layer of the feeling and so on until I was done. It was extremely yummy.
Enchiladas are supposed to be made with corn tortillas, traditionally speaking.

It's funny that you thought you couldn't make enchiladas in corn tortillas. Traditionally in Mexico enchiladas are made with corn tortillas never flour tortillas, lol.

looks great but this exceeds my level of culinary attention span. My limit is one pot rice dishes. Last night I put the oven on for the first time in over a month and baked some potatoes and ate them with a tin of cold bake beans, but that was pushing the boat out FUCKING FAR.
I dont see myself going vegan in the near future, but love te recipes as I am trying to cut down on amount of meat my familie is eating. They are not big fans yet so allways up for trying out some new recipes. Love the double "yah" at the end!

Very nice, man. Only suggestion is to make your own corn tortillas with a cast iron press. Only requires masa hairna and water, is delicious and cost effective. Vegan power!
