I LOVE mushrooms so imagine my delight when I saw this pop up on YouTube!! Another gift from Jill! I just received a mushroom grow kit but I don't think I can wait 10 days to make this dish!! I look forward to discovering her recipes every morning! Just made banana pudding, buckwheat bread and man oh man, you all should try her salad dressings!!! Yummy! Trying the mayonnaise too to make vegan egg salad! Can't thank you enough Jill!!!!!β€

I made this and wow it was delicious! I didnβt have a large enough skillet so I transferred the mushroom onion bean mixture to a baking dish then added the greens and allowed them to wilt. I also substituted balsamic vinegar for the prune juice as I have church tomorrow and warmed prune juice is not the love when youβre in a room full of people lol! Thanks for this recipe it made my house smell delicious!β€

This tasted rather nice … made it for xmas eve. Served with a few steamed carrots and parsnip chips (no oil, roasted off in the over). Next time i think i'll add a few porcini mushrooms for extra depth/flavour.
Took a while for my blender to blitz the topping into a batter but i got their in the end.

I made this a couple of nights ago! Very hardy and I love how easy the quinoa topping is and how it cooks!!! I also made the quinoa flatbread yesterday. I might add some black cumin seeds and other spices like garlic and maybe nootch to go with Jill's lasagna which I am making for Christmas! I'm making many of Jill's recipes all the time and just get so excited about all the new/old ones I'm finding! I've learned so much from you, Jill, about plant based cooking! I know it's a lot of work and expense creating great recipes and we all appreciate you so much for it!

OMG! This might be your best recipe yet!! I made it last night and the two of us almost completely finished it off. The flavors are perfect. And it's so easy to make. – Basically a one pot dish. The idea of making a quinoa crust is so creative. It's now on our regular weekly rotation. I was wondering what I'd do with that big jar of prune juice, but will get used up in no time. π
