Heat the mushrooms with a quarter cup of water instead of oil to getcthe mushrooms to release their moisture. They will shrink as the moisture comes out. When the excess moisture is cooked out then you add your oil to get a good brown on the mushrooms.
This is an ATK cooking trick and its a game changer.
Every time a vegan says something tastes like beef I know they haven't eaten beef in at least 10 years.

Why mimic meat if veggies are all you need. Im allergic to nuts like a lot of people but not beef though ironically.
This would make for good duxelles, or part of a stuffing, I think.

Walnuts are also really high in fat so mushrooms and cauliflower or carrots help dilute that fat too

You know what else tastes like beef? … BEEF! The only animal that can turn vegetables into beef is a cow. I eat vegetables too and I enjoy them. I just don't pretend they're something else. If you need to fool yourself into thinking you're eating meat, maybe you just need to eat some meat FFS!
