I would fry and mash up the marinated sweet potatoes or grate them and mix with other viggies. I make cutlets with such a mix..

Wonderful and different way to prepare and eat sweet potato. I am trying to learn to eat more veggies and recipes like this really help. When my clients say that they don't like vegetables I explain that maybe it is just the way you learned to prepare and cook them. We explore new cooking recipes and before the know it, they become a vegetable eater. Thanks for recipes like these to change their minds.
