To a pot, add
-1,7 lb (800g) fresh or frozen spinach
And cook until soft. Let it cool, chop it and then
Mix with
-1/12 cups vegan ricotta / cream cheese
season with
-salt & pepper
And set aside
To prepare the sauce, sauté
-1 onion, chopped
-2 garlic cloves, minced
And add
-3 cups crushed tomato
Season with
Salt and set aside.
For the béchamel sauce melt
-2 tbsp butter
In a saucepan and stir in
-2 tbsp flour
And cook until the paste bubbles a bit.
Add
-1 cup soy milk
Bring to a boil and turn off the heat.
season to taste with
-salt & pepper
and continue stirring until you have a creamy consistency.
Fill the Pasta with the spinach ricotta mix.
Add the tomato sauce to the bottom of the baking tray,
Some of the béchamel and then the pasta on top.
Cover with more tomato sauce, béchamel and some vegan cheese.
Bake in a pre heated oven at 180C / 350F for 30 mins and enjoy 🙂
