I made this cake and it was a flop followed your instructions to a tee it came out not pink even with the food coloring and you need more than a drop of red coloring I was disappointed and wasted money and time

PRO TIP: USE FROZEN STRAWBERRIES!!!! β€β€β€β€
1) Strawberries are frozen at their peak ripeness resulting in richer flavor and darker color.
2) no greyish color when cooked. No food color needed.
SN: It will start out a really pale pink color. Just continue cooking. The longer you cook the deeper and richer the color.

For the Cake:
β’ 2 ΒΎ cups all-purpose flour 330g
β’ 2 Β½ teaspoons baking powder
β’ 1 teaspoon salt
β’ ΒΌ teaspoon baking soda
β’ 1 cup unsalted butter softened (227g)
β’ 2 cups granulated sugar 400g
β’ 4 large egg whites room temperature
β’ 2 teaspoons vanilla extract
β’ Β½ cup whole milk 120ml
β’ Β½ cup fresh strawberry puree reduced (see Notes) (120ml)
β’ pink food coloring optional
For the Strawberry Frosting:
β’ 8 ounces cream cheese room temperature (227g)
β’ 1 cup unsalted butter room temperature (227g)
β’ 1 teaspoon vanilla extract
β’ pinch of salt
β’ 6 to 7 cups powdered sugar sifted (720g-840g)
β’ ΒΌ cup fresh strawberry puree reduced

i tried out this recipe step by step.. the cake was delicious but my cake was hard after 2 hours. Also the butter cream doesn't let any decoration sit as it slips off the cake edge.. i would like to learn whipped cream frosting for this cake and also how to avoid the stiff cake
I've done this cake a couple of times, but I really find difficult to add that many sugar in the frosting, for me 200-250 grams of powdered sugar would be enough and still tastes delicious.
Little one is going through a strawberry lemonade craze. Her birthday cake may just have to be this cake with lemon instead of strawberry frosting.
