Personally I reed that emultion makes fats easier to digest so I emultionate the coconut fat I usually take for breakfast with my soy milk yogurt and okara dehydrated bicuits. I emultionate this coconut fat with soy milk (racio 1:1~), sweetens it and flavors it with a pinch of vanillin and salt, plus coloring eventually.
The mayonnaise I do with soymilk is very interesting because it need's just a tiny amount of soy milk and the resulting texture is marvelously creamy. Simply 1/3 glass of soymilk with a clove of garlic and then sunflower seed oil (not canola because of the adverse cognitive effects, you know) and finally salt, black pepper, mustard and/or vinegar, flavorings, colorings.
