I tried making this cake last night and ruined it. I used the electric mixer so the batter ended up being smooth – not chunky, couldn't find strawberry extract anywhere, and when the cakes came out they deflated. The buttercream came out more like a glaze. I think its because I put too much puree. The recipe looked so easy and I still ruined it 😭😭

How did you make the puree? I want to make the cake on monday, but I'm pondering whether I should make it by just blending up the strawberries and adding it in or put it on the stove to concentrate more and then add it in, Id rather avoid the latter : /

This is just what I was looking for! Many vegan strawberry cake recipes included vegan butter and my parents won't by me it so it's nice to not have to worry about substitutes
