A few tricks:
-Press the tofu first to get the water out. If you are lazy, you can buy the "super firm" tofu that's in the vacuum-sealed packages.
-You can bake the tofu instead of frying it if you want to make the recipe a little healthier. Just gently coat the tofu with a little bit of neutral oil (I like avocado oil) before sprinkling on the corn starch. Bake at 420 F for 15 minutes, turn the tofu over, and bake for another 8 minutes until golden brown.

Why is there always the necessity of including sugar?
Iโve made this so many times and itโs so good. I love adding sambal, gochujang and some orange zest to the sauce.
