I love how much passion you have for flavour! The soup wasn't what you had hoped for but you turned it around and made it special by adding the croutons and cheese afterwards and adding the sauce to the soup to improve its flavour profile. I often find myself doing this when I have tried a recipe and it hasn't turned out as well as I'd hoped, and your descriptions of flavour really helps to educate me how I can salvage less exciting meals! I like using left overs for new meals…your veggie pizza looked really yummy! Iam in process of cleankng out my freezer and putting meals together with leftover meals. I won't be grocery shopping this week🤣 I love Ethiopian food especially injera. My friend makes firfir with leftover injera for breakfast-so Yum!😋

Great video Nikki and excellent timing for March in the US where we are still waiting inside for spring. Ethiopian food is my fav. And I loved loved the loved the bowl that served 2 nights. I think the potatoes really make it better. Love this channel so much! It’s a real Go To.

I love your idea of cooking the tempeh in some water with the soy sauce. I have been air frying it which is okay. But it looks like the water sauté can be even better and taking on the flavors of the spices 👌🏻👌🏻👌🏻👌🏻
To replace the umami taste of the parmesan rind, I would also soak some dried shitatake mushrooms and put the soaking water and the chopped up mushrooms into the soup.
